The annual Sweet Treats Cookie and Candy Tour is December 10 from 1pm - 6 pm. We've still got rooms left; and plenty of tickets if you just want to come over for the day. You'll visit 9 Bed & Breakfasts all decorated for Christmas to reveal unique ideas for holiday decorating; sample sweet treats at each inn and receive 2 variteies of cookies with the recipes to add to your collection. The treats come pre-bagged so you don't have to indulge all at once. It's a great way to kick off the holiday season and do a little Christmas shopping in our unique shops downtown. The September issue of Distinctly Oklahoma Magazine which includes the Oklahoma City metro area features us this month. They included our Baked Eggs Benedict and Chocolate Zucchini Bread recipes on page 35 and then included us in their article on Eureka Springs. Opera in the Ozarks begins June 24

The 2011 season of Opera in the Ozarks begins June 24. If you love opera, you need do attend!

This year's opera lineup includes 23 total performances and runs through July 22. Three popular operas are featured: Die Fledermaus (The Bat) by Johann Strauss II; Le Nozze di Figaro (The Marriage of Figaro) by Wolfgang Amadeus Mozart; and Little Women by Mark Adamo, which is sung in English.

The summer program brings spectacular music, performance and stagecraft to Eureka Springs, while helping talented young artists from across the nation hone their operatic skills.

Singers perform in period costume and are accompanied by a full orchestra. It is rare for an opera house to offer three great operas in four week season, and the young singers work at an extremely intense pace to make the magic happen.

May is certainly the time to see many varieties of birds at our feeders. We've got Northern Orioles and Rose-breasted Grosbeak migrating through; and the ruby throated hummingbirds are back in force. The Orioles love grape jelly and oranges, so my new feeder is working out perfect. We've even spotted the Gray Catbird eating the grape jelly. Victoria House Cottage reopens

After 4 months of renovation, the Victoria House Cottage improvements are complete. There are two new bathrooms each with walk-in showers and an updated kitchen with Keurig coffee maker. We hope the addition of another bathroom will make life easier when the 'girls' come to stay and it is now perfect for two couples too.

Victoria House Cottage gets new bathroom

Victoria House Cottage is getting a new look this winter. We're finishing Phase 2 of it's remodel. Our winter project is demolishing the existing bathroom and sleeping porch to make two new bathrooms. Plus we'll update the kitchen a little with new paint, flooring and less wallpaper. This will make the two bedroom/two bathroom cottage even more popular we hope; especially when two couples or 4 ladies share the space. Day one of demolition today. We'll keep you posted.

The Queen Anne Mansion tour home will offer Candlelight Tours this coming holiday season. Experience the mansion bathed in the soft light of candles and firelight from one of their 8 magnificent fireplaces. The staff will welcome you dressed in 19th century attire to celebrate an authentic Victorian Christmas while the home will be adorned with Christmas decorations. Catch the holiday spirit with the live accompaniment of the violin and harp. Refreshments will be served in the Garden Level of the mansion. Candlelight Tours will be offered November 27th, December 4th and December 11th at 5 pm and will last approximately 1.5-2 hours. $25 per person.

The leaves are beginning to turn here in the beautiful Ozark Mountains. According to the weatherman peak leaf color should be October 26 thru November 4. There's a brand new wine bar opening today here in Eureka Springs. It is located downtown near the trolley depot. It is called The Stone House. They have been renovating this beautiful stone building for a year and it is beautiful inside and out. They will serve wines and imported beers, that they have paired with cheese, salamis and tapenades. These folks know their wines. They've got a lovely patio to watch the world go by or sit inside the historic stone walls. Check out their website for the menu and when you're here stop in.

Smoked Salmon Potato Crisps

The Taste of the Inns went well this weekend, this is one of the appetizers that we served. Very simple to make and the potato chips make it even easier. Hope you enjoy!
Smoked Salmon Potato Crisps
2 large potatoes (or 1 bag Sea Salt & Cracked Pepper Potato Chips)
Sea Salt & Fresh Pepper
Smoked Salmon
Creme Fraiche (or sour cream)
Fresh Chives, chopped
Make the potato crisps (if not using the purchased potato chips): Thinly slice 1 potato at a time using a mandolin. Place in a single layer on a greased cookie sheet. Season generously with salt and pepper. Bake at 350 degrees for 20 minutes or until golden and crisp. Set aside and repeat with remaining potato.
Assemble the appetizer: Start with one crisp, add a small piece of smoked salmon, then top with a dollop of creme fraiche and garnish with chopped chives. Continue until all potato crisps are assembled. Serve immediately.
Makes 24 appetizers

Apple Bacon Cheddar Bake

Apple Bacon Cheddar Bake
Tart green apples, crunchy bits of bacon, and gooey cheddar... topped with a southern style crust and warm maple syrup... is it a bountiful breakfast or a savory dessert?

6 slices Bacon, fried crisp and crumbled
2 cups sliced Granny Smith apples
2 tbls Sugar
2 cups grated sharp Cheddar cheese
2 cups Bisquick
2 cups Milk
6 Eggs
Maple Syrup

Preheat oven to 375 degrees. Evenly distribute apple slices in greased 9 X 13 inch baking dish*. Top evenly with cheese, then bacon crumbles. Whisk eggs, milk and Bisquick together. Pour batter over apples and cheese gently. Bake in 375 degree oven for 35 to 40 minutes, until lightly browned. Serve with maple syrup. Serves 8 to 10 people.

*Note, you can also prepare these individually in 8 greased ramekins dividing ingredients evenly. Bake for 35 to 40 minutes, until lightly browned."

Blueberry Bread Pudding

Facebook Heartstone Inn and Cottages Bed & Breakfast: Blueberry Bread Pudding: "Serve this rich treat warm and melt into the sweetness on a cold winter's day. Make enough to last you the weekend ;)

3 to 4 Blueberry Muffins (homemade or bakery)
1 1/2 c Milk
2 tbsp Honey
3 Eggs, beaten
2 tbsp Butter
1 c fresh or frozen Blueberries
2 tbsp grated Lemon Rind
Powdered Sugar

Preheat oven to 350°. Crumble muffins into a greased 1 quart casserole. Mix milk and honey with beaten eggs; pour over muffins. Dot with butter and top with blueberries. Sprinkle with grated lemon rind. Bake for 40 minutes or until set. Sprinkle with powdered sugar and serve.

Serves 4 to 6."

Happy Fall! The leaves have just a hint of color starting, and the nights are cooler. Make your plans now to come see how pretty the Ozarks can truly be. The hummingbirds have officially left us, whew! The Corvette weekend was great! We had 9 rooms that were all corvettes, so our parking lot looked sharp. Todays breakfast was Raspberry pecan croissant french toast with potato gratin, fresh fruit and sausage.

Beautiful fall day in Eureka Springs. We've had three weddings today and I am baking apple pumpkin muffins for tomorrow's breakfast (page 77 in our cookbook). They sound good for a fall day.

As promised, the crab cake recipe from the August Taste of the Inns event. These are yummy and got great reviews from the participants.
Crab Cakes
1/4 cup mayonnaise
1/4 cup onion, minced
2 eggs, lightly beaten
1/2 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound lump crab meat, picked over
1 1/2 cups Ritz crackers, finely crushed
2 Tablespoons unsalted butter
1/4 cup vegetable oil
lemon wedges
Assemble the crab cakes: In a large bowl, combine the mayonnaise, onion, eggs, Worcestershire sauce, dry mustard, salt and cayenne. Fold in the crab meat and 1/2 cup of the cracker crumbs. Shape the mixture into 16 cakes about 1 inch thick. Coat the crab cakes with the remaining cracker crumbs and transfer to a baking sheet lined with waxed paper. The crab cakes can be refrigerated overnight at this point, if needed.
In a large skillet, melt 1 tablespoon of the butter in 2 tablespoons of the oil. When the foam subsides, add half the crab cakes and cook over moderate heat until golden and crisp, 2 to 3 minutes per side. Drain the crab cakes on paper towels and then keep warm in a low oven. Repeat with the remaining 1 tablespoon of butter and 2 tablespoons of oil and cook the remaining crab cakes. Serve with lemon wedges. Enjoy!

The August Taste of the Inns was great fun and a big success for the first year! As promised I'll include the recipes we used. The first is perfect for this time of year, we went to the Farmer's Market and bought all fresh produce and the Garden Fresh Gazpacho was delicious. It has a touch of spice and a nice crunch to it. It tastes like summer. Give it a try!
Garden Fresh Gazpacho
2 1/2 cups tomato or vegetable juice
1 cup peeled, seeded & finely chopped fresh tomatoes
1/2 cup finely chopped celery
1/2 cup finely chopped cucumber
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped green onion
3 Tablespoons white wine vinegar
2 Tablespoons extra virgin olive oil
1 large clove garlic, minced
2 teaspoons finely chopped fresh flat leaf parsley
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/2 teaspoon freshly ground black pepper
Combine all ingredients in a large glass bowl. Cover and refrigerate overnight. Serve cold.

This coming weekend is the August Taste of the Inns and Rick and I have been testing appetizers for several weeks now. We have finally settled on our two choices to serve all tour participants. They are Garden Fresh Gazpacho with all fresh ingredients from the Farmers Market and Crab Cakes with fresh crab and a dijon mustard sauce. After the tour I'll share both of these recipes on this site. We will also be serving a 'mocktail' and have chosen a non-alcoholic Mimosa that you make with sparkling cider instead of champagne. Looking forward to this event and also the Volkswagen car show which is also this weekend. Lots and lots of beetles and bugs in town.

Bluegrass Festival this weekend, lots of music around town and in the parks. Busy weekend for us, we have a couple shadowing us to see if they would like to buy a bed and breakfast. This is a service we offer to aspiring innkeepers. Lets folks get a taste of what it is really like.

Rick and I enjoyed a few days off and traveled with friends. Had a nice time shopping, and trying new restaurants. Nice weekend in store, no major events in Eureka Springs this weekend, but still a busy one. Trying out recipes for the Taste of the August event coming up soon.

Yards & Yards of Yard sales weekend. Several of our guests were out before breakfast picking up treasures. The whole town participates, and if you're a bargain hunter, you might want to make plans for next year.

We've almost filled up for our August Taste of the Inns event on August 29th. It should be a fun event where you tour 12 B&B's and try their favorite appetizer recipes and 'mocktails'. You surely won't need dinner after this event. Rick and I have been testing appetizer recipes every night for dinner but haven't settled on the two perfect ones yet. Stay tuned...

We've got a girls high school reunion here this weekend from Ft. Smith, Kansas. They've come from all over after getting reacquainted on Facebook. They're planning on shopping til they drop and we can attest to the laughter they are sharing. Looks like fun. Temperature is in the mid 80's and it super pleasant.

Served a lovely breakfast of Eggs Florentine (page 14 of our cookbook), Surprise Bran muffins (page 58) Crisp Bacon and a new recipe of Almond Butter baked Peaches. These were a hit. You can also use Nectarines or Apricots.

The Heartstone Inn’s
Almond Butter Baked Peaches
This is for 4 servings.
¼ cup sliced almonds
3 Tablespoons light brown sugar
4 Tablespoons butter, at room temperature
4 peaches, nectarines or 6 apricots
Split and core the fruit and place face up in a greased square baking dish.
In a food processor pulse the almonds and brown sugar until the almonds are finely chopped. Add the softened butter and pulse to combine. Spoon a teaspoon or so of the almond butter inside the halved, cored fruit. Bake at 350 degrees for 20 minutes. Enjoy!
